Make an Authentic Salsa

When you make salsa you want it to be the real deal, in other words authentic. Let us show you how to make an authentic salsa that has some real kick. This is a classic cooked green salsa recipe. Here is another authentic salsa recipe for a cooked red salsa. Preparation is very similar for both and each are equally good.

Start with the ingredients:
2 lbs tomatoes
1 large onion
6 cloves of garlic
3 serrano chiles – serranos are a very hot green chile
6 sprigs of cilantro
1 cup of water
Salt to taste

Preparation
First, collect all of your ingredients and rinse them under cold running water. remove the stems from the tomatoes and chilies and remove the skin from the onion.

Roughly chop all of the vegetables except the cilantro.

In a large pan over high heat, char all of the vegetables except the cilantro. When the vegetables are blackened remove them from the heat and allow them to cool.

Add all of the vegetables including the cilantro to your blender. It will be quite full. If you can’t fit all of the ingredients in just make it in two batches. Blend until smooth.

Place the salsa in a large pot and simmer for 45 minutes until the salsa is fully cooked and starts to thicken. If it becomes too thick just add a little bit of water until you get the consistency you want.

The final step is to fry the salsa. In another large pot, heat 4 tablespoons of cooking oil such as corn oil until very hot. Pour 1/4 of the salsa into the pot. It will immediately start to sizzle. Be careful. The hot oil make splatter. Let it fry for one minute and add another 1/4 of the salsa. It will continue to sizzle although a little less vigorously. Cook for one minute. Finally, add the rest of the salsa and turn the heat to low and simmer for 20 more minutes.

Serve the completed salsa with your favorite Mexican dish.
